Shaved Fennel and Arugula Salad

A fresh and elegant salad combining peppery arugula with crisp shaved fennel, salty oil-cured olives, and rich Parmesan shavings in a bright lemon-anchovy vinaigrette.

Ingredients

  • 3 tablespoons fresh lemon juice
  • 1 teaspoon red wine vinegar
  • 1 teaspoon anchovy paste
  • ½ cup extra-virgin olive oil
  • 1 pinch Fine sea salt
  • 5 ounces arugula
  • 1 bulb fresh fennel
  • cup oil-cured black olives
  • 2 cups Parmesan cheese

Cooking Instructions

    Whisk first 3 ingredients in small bowl to blend. Gradually whisk in oil. Season dressing to taste with sea salt and pepper.
