Pickled Pears

A spicy-sweet Asian-inspired pickle featuring pears preserved in a flavorful brine of rice vinegar, ginger, and chiles. Perfect as a condiment or side dish.

Ingredients

  • 1 cup unseasoned rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon kosher salt
  • 1 piece ginger
  • 1 small chile
  • 1 teaspoon whole black peppercorns
  • ½ teaspoon gochugaru
  • 1 whole Asian pear
  • 1 large Anjou pear
  • 1 whole Granny Smith apple
  • peeled
  • cored
  • cut into 1" cubes

Cooking Instructions

    Combine all ingredients except pear in a small saucepan. Add 1/2 cup water and bring to a boil. Reduce heat to medium-low and simmer for 5 minutes to meld flavors. Remove from heat and let sit until warm.

    Place pear cubes in a 12-ounce jar with a tight-sealing lid. Add warm pickling liquid. Let cool at room temperature for 30 minutes. Cover and chill. DO AHEAD: Can be made 1 week ahead. Keep chilled.
