Speedy Summer Gazpacho

A refreshing cold Spanish soup perfect for summer, made with fresh vegetables including cucumber, tomatoes, and red pepper. This no-cook gazpacho is quick to prepare and bursting with fresh flavors.

Ingredients

  • 1 whole cucumber
  • 6 medium tomatoes
  • ½ oz basil leaves
  • 1 stalk celery
  • ½ whole red pepper
  • 2 cloves garlic
  • 1 whole lemon juice
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • to taste sea salt and black pepper

    Put all the ingredients in a food processor and blitz until smooth, then season to taste with salt and pepper.
