- •1 whole cucumber
- •6 medium tomatoes
- •½ oz basil leaves
- •1 stalk celery
- •½ whole red pepper
- •2 cloves garlic
- •1 whole lemon juice
- •1 tbsp extra-virgin olive oil
- •1 tbsp red wine vinegar
- •to taste sea salt and black pepper

Put all the ingredients in a food processor and blitz until smooth, then season to taste with salt and pepper.
