Parsley, Red Onion, and Pomegranate Salad

A vibrant Middle Eastern-inspired salad combining crisp red onions, fresh parsley, and jewel-like pomegranate seeds, dressed with sumac and pomegranate molasses for a sweet-tart flavor profile.

Ingredients

  • •1 large red onion
  • •1½ teaspoons sugar
  • •1 teaspoon ground sumac
  • •1 to taste Kosher salt
  • •3 tablespoons olive oil
  • •1 tablespoon red wine vinegar
  • •1 teaspoon pomegranate molasses
  • •4 cups fresh flat-leaf parsley
  • •¼ cup pomegranate seeds

Cooking Instructions

  1. 1.

    Toss onion, sugar, and sumac in a medium bowl; season with salt and let sit 30 minutes.

    Add oil, vinegar, and pomegranate molasses and toss to combine; let sit 5 minutes.
