- •⅓ cup sliced almonds
- •1 small onion
- •1½ tablespoons olive oil
- •1¼ cups medium bulgur
- •1⅓ cups water
- •¾ teaspoon salt
- •¼ teaspoon black pepper
- •¼ cup dried apricots
- •½ tablespoon unsalted butter
- •3 tablespoons fresh flat-leaf parsley

Cook onion in oil in a 3-quart heavy saucepan over moderate heat, stirring frequently, until softened and beginning to brown, about 8 minutes. Add bulgur and cook, stirring, 2 minutes.
