Vegetarian Tagine
A hearty Moroccan-inspired stew combining butternut squash, cauliflower, and chickpeas with warm spices like cinnamon, cumin, and paprika, served over fluffy couscous. This flavorful vegetarian dish is both nutritious and satisfying.
Ingredients
- •1 tablespoon olive oil
- •1 small onion
- •1 clove garlic
- •1 stalk celery
- •1 whole carrot
- •1 teaspoon paprika
- •½ teaspoon ground cinnamon
- •½ teaspoon ground cumin
- •½ teaspoon ginger
- •2 teaspoons salt
- •1 can diced tomatoes
- •1 small butternut squash
- •2 cups cauliflower florets
- •2 cups low sodium vegetable broth
- •2 cups chickpeas
- •¼ cup raisins
- •3 cups cooked couscous
