Winter Salad with Lemon-Yogurt Dressing

Ingredients

  • 1 cup plain whole-milk yogurt
  • cup chopped fresh Italian parsley
  • ¼ cup avocado oil or canola oil
  • ¼ cup fresh lemon juice
  • 1 clove garlic
  • 1 pinch Fine sea salt
  • 8 cups coarsely chopped romaine lettuce
  • cups peeled jicama
  • 2 small carrots
  • 1 whole avocado
  • 1 cup sliced celery
  • 1 cup peeled kohlrabi or broccoli stems
  • ¾ cup canned garbanzo beans
  • ¾ cup halved pitted Kalamata olives
  • ½ cup thinly sliced radishes
  • ½ cup roasted sunflower seeds

Cooking Instructions

    Whisk first 5 ingredients in small bowl. Season dressing to taste with sea salt and freshly ground black pepper.
