Tad's Roasted Potatoes

Crispy, golden-brown Yukon Gold potatoes roasted with fresh herbs and garlic. These potatoes are seasoned with olive oil and finished with kosher salt and freshly ground pepper for a delicious side dish.

Ingredients

  • 8 sprigs hearty herbs
  • 4 cloves garlic
  • 3 pounds Yukon Gold potatoes
  • ¼ cup olive oil
  • 1 tablespoon Kosher salt
  • 1 teaspoon freshly ground pepper

Cooking Instructions

    Preheat oven to 375°F. Place herbs, garlic, potatoes, and oil in a large bowl; season with salt and pepper and toss to coat. Divide between 2 large rimmed baking sheets and roast, tossing occasionally, until potatoes are soft and golden brown, 45-55 minutes.
