Rainbow Slaw

A colorful and crunchy coleslaw featuring a medley of green and red cabbage, carrots, yam, apples, and peppers in a creamy maple-mayo dressing. Perfect for picnics and barbecues.

Ingredients

  • •1½ cups mayonnaise
  • •2 tablespoons apple cider vinegar
  • •1 tablespoon sugar
  • •1 tablespoon pure maple syrup
  • •1 small green cabbage
  • •1 small red cabbage
  • •2 medium carrots
  • •1 small yam
  • •1 large Fuji apple
  • •1 large Golden Delicious apple
  • •1 medium green pepper
  • •3 whole green onions
  • •1 pinch Paprika

Cooking Instructions

  1. 1.

    Whisk mayonnaise, apple cider vinegar, sugar, and maple syrup in small bowl. Place green cabbage and next 7 ingredients in very large bowl. Pour dressing over; toss. Season to taste with salt and pepper. Cover and chill 1 hour.

    Do ahead: Can be made 8 hours ahead. Chill. Sprinkle with paprika and serve.
