  • ½ cup sugar
  • teaspoon ground cinnamon
  • 4 cups vegetable oil
  • 1 cup gluten-free old-fashioned oats
  • ½ cup rice flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • ¾ teaspoons kosher salt
  • 1 large egg
  • ½ cup club soda
  • 2 large crisp apples
  • 1 piece deep-fry thermometer

Transfer to a large bowl and whisk in rice flour, cornstarch, baking powder, salt, and remaining 2 tablespoons sugar and 1/2 teaspoon cinnamon. Whisk in egg and 1/2 cup club soda, adding more soda by the tablespoonful until the consistency of pancake batter.
