Chickpea Ragout
A hearty Mediterranean-style stew combining tender chickpeas, aromatic spices, and fresh herbs in a flavorful tomato broth. Served over couscous, this vegetarian-friendly dish is both comforting and nutritious.
Ingredients

- •1 whole red onion
- •2 tablespoons minced garlic
- •1 teaspoon ground cumin
- •2 cans chickpeas
- •1 can diced tomatoes
- •2 sprigs fresh thyme
- •2 teaspoons honey and fresh lemon juice
- •1¾ cups chicken or vegetable broth
- •2 cups couscous
- •½ cup chopped flat-leaf parsley
