White Beans with Tasso

A hearty Southern-style dish combining tender Great Northern beans slowly cooked with smoky ham hock, spicy tasso, and aromatic vegetables. This comforting meal brings together classic Cajun flavors in a rich, satisfying way.

Ingredients

  • •3¼ cups water
  • •12 ounces dried Great Northern beans
  • •1 piece smoked ham hock
  • •1½ ounces tasso sausage
  • •1 small onion
  • •2 stalks celery
  • •1 small red bell pepper
  • •2 cloves garlic
  • •2 pieces bay leaves

Cooking Instructions

  1. 1.

    Stir 3 1/4 cups water and all remaining ingredients in large slow cooker. Cover and cook on high until beans are tender, stirring occasionally and adding more water if dry, about 4 1/2 hours. Remove ham hock. Cut off all meat; shred and return to beans. Season to taste with salt and pepper.
