Ingredients

  • 2 teaspoons finely chopped shallot
  • 1 teaspoon honey
  • 2 tablespoons fresh orange juice
  • 2 tablespoons Sherry vinegar*

  • ¼ teaspoon white pepper
  • ¾ cup extra-virgin olive oil
  • 3 whole Belgian endives
  • 1 whole small red onion
  • ½ bulb fennel bulb
  • ¼ whole celery root
  • ½ whole Granny Smith apple
  • 2 cups mizuna or mustard greens
  • 2 ounces firm aged goat cheese
  • 1 teaspoon white truffle oil

Cooking Instructions
