Baked Eggs with Tomato

Ingredients

  • 14 tablespoons olive oil
  • 4 whole tomatoes
  • 1 clove garlic
  • 1 tablespoon flat-leaf parsley
  • 1 pinch superfine sugar
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons butter
  • 4 whole large eggs
  • 4 leaves basil leaves
  • 16 pieces toast fingers
