Shrimp Un-Fried Rice

A healthier twist on traditional fried rice made with brown rice, succulent shrimp, scrambled eggs, and colorful vegetables. This protein-rich dish combines the flavors of sesame, soy sauce, and fresh scallions for a satisfying meal.

Ingredients

  • 1 tablespoon oil
  • 4 whole large eggs
  • 1 whole red bell pepper
  • ½ cup shelled edamame
  • 1 clove garlic
  • ½ pound shrimp
  • ½ teaspoon salt
  • 4 cups cooked brown rice
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon sesame seeds
  • 1 tablespoon diced scallions

    1. Heat 1 teaspoon of the oil in a skillet over medium heat. Add the whisked eggs and cook for 1 minute stirring to make scrambled eggs, then remove to a plate.

    2. Heat the remaining 2 teaspoons oil, add the red bell peppers and cook 3-4 minutes, until soft. Add the edamame and garlic and cook 1 more minute.
