- •1 bunch celery
- •1½ tsp kosher salt
- •½ cup buttermilk
- •3 Tbsp white wine vinegar
- •1 tsp honey
- •1 tsp black pepper
- •3 large apricots
- •4 oz blue cheese
- •1 cup mint leaves
